oatmeal chocolate chip cookies (GF + V) c/o beaming baker

I’m sure we all have our favourite dessert that goes with our coffee or chai. Mine is a toss up between the perfect chocolate chip cookie or a slice of cake – depends on the time of day, season, and mood. On the hunt to create an oatmeal chocolate chip cookie, I came across this one by Demeter of the Beaming Baker. It’s buttery, soft in the centre with crispy edges, oatmeal-centric, and filled with loads of chocolate.

The ingredients are: gluten-free rolled oats, oat flour, baking powder, cinnamon, nutmeg (optional), salt, flax egg, coconut sugar, maple syrup, vanilla extract, and chocolate chips. Click here for her “BEST Gluten Free Oatmeal Chocolate Chip Cookies” – they will not disappoint!

note: I’ve made them 3 times already and I get my favourite size my smushing them down into 1/2 inch thick rounds before popping them into the oven. She gives you loads of tips on her blog so that they’ll turn out perfect.
