salted Caramel Skillet Cookie c/o Kale Junkie

I’ve been dreaming of a chocolate chip skillet pie sort of situation (as one does?), and in my hunt to find one I came across Kale Junkie’s Salted Caramel Cookie Skillet. The “caramel” is a blend of almond butter, maple syrup, and coconut oil and the dough is almond flour-based with the usual suspects – an egg, baking soda, vanilla, salt, etc. (it can also be made vegan). The only change I made is broiling it for 2ish mins at the end because my cookie didn’t have that browned colour at the top. If you find you experience the same thing after the 20ish min recommended bake time, you can do the same – just don’t leave it unattended on broil!  It’s literally one of those eat-straight-from-the-pan, standing-over-the-counter desserts. I packed up little portions to take to the kids for school pick up yesterday – I know, most days it’s the same packaged granola bars from Costco on repeat and then sometimes I just want to be that doting Betty Crocker mama. Anyway, it’s easy to make, yummy to eat and the perfect thing to have hanging out on your kitchen counter this weekend.
